Analyzing the Most Common Food Safety Issues in Cold Storage: How to Avoid Them & Prepare for the Future Frozen Food Supply Chain

Cold storage facilities have a significant burden to address and meet food safety expectations within the supply chain. A booming frozen category means greater burden on cold chain logistics to handle, monitor, and track frozen foods as well as comply with a range of food safety standards. Warehouses registered with the FDA need to implement Food Safety Modernization Act’s (FSMA) requirements even as they contend with the structural challenges of capacity shortages, energy use, and costs.

Attendees will learn key food safety elements and details of the agency’s final Food Traceability rule and its implications for frozen foods. Panelists will reveal new research findings and never-before-seen audit data, share ongoing global efforts toward scale transitions in the frozen food supply chain, particularly as it relates to sustainability and energy-use, and discuss potential operational impacts in cold storage facilities.

Sanjay Gummalla, PhD

Senior Vice President of Scientific Affairs, American Frozen Food Institute (AFFI)

Dr. Sanjay Gummalla is sr. vice president of scientific affairs, at the American Frozen Food Institute (AFFI). His broad industry experience in food science and nutrition are key to guiding science and policy advocacy, and effective scientific tools and resources for the food and beverage industry. He is in the forefront of coordinating Listeria monocytogenes and enteric virus prevention and control programs on behalf of the frozen food industry. As executive director of the frozen food foundation, the research arm of the industry, he steers a portfolio of initiatives and projects in food safety, nutrition, and sustainability. He holds a Ph.D. in Nutrition and Food Sciences from Utah State University.
