Food Safety Tech Hazards Series:

Preparing for and Responding to Contamination Events

Despite best practices and vigilance, foodborne illness-causing pathogens will enter your facility. When they are detected, next steps are key to preventing contaminated foods from reaching consumers. In this webinar, we will look at how businesses can prepare for contamination events, and how to respond when an event occurs.

AGENDA

12:00 pm - Welcome & Introductions
Inga Hansen, Managing Editor, Food Safety Tech

12:05 pm - 12:35 pm - What to do (and not to do) When You Have an Out of Spec Sample
Douglas L. Marshall, PhD, CFS, Chief Scientific Officer, Eurofins Microbiology Laboratories

Out-of-spec (OOS) validation and verification data points are a gift to manufacturers; however, too often such opportunities are not fully exploited.  Process validation data points prove that pathogen and allergen control programs are working as intended.  Once properly validated, periodic verification data points demonstrate that daily controls are producing the desired outcome.  An OOS validation record is evidence that the process is not working as intended and needs to be corrected before use.  An OOS verification record is evidence that a validated process is no longer working in practice.  This talk will give examples of OOS-triggered root cause analysis, corrective actions, and preventive actions.

12:35 pm - 12:50 pm - How Real-time Microbial Monitoring in Food Production Could Help Reduce Potential Contamination Events - TechTalk Sponsored by Romer Labs
Meredith Sutzko, Global Food Safety Product Manager, Romer Labs

  • Learn how impedance flow cytometry can help you reduce the risk of a pathogen contamination event by directly measuring the amount of total bacteria in your production facility.
  • Get an early warning sign of changes in the sanitary condition of your plant.
  • React faster to minimize your risk.

12:50 pm - 1:20 pm - Preventive Controls and Recall Plans: Where Facilities are Missing the Mark
Bryan Armentrout, Food Safety Consultant

Environmental monitoring is a the heart of your food safety program. Odds are the program hasn’t changed in years. As recent FDA Warning Letters has shown, their tactics for regulating compliance have changed.

In this interactive presentation, we will go over these key elements

  • Go over the new FDA approach to environmental monitoring
  • Analyze a real world case study
  • Break down the components of a warning letter
  • Help you plan next steps so you are ready for your next FDA inspection
