The U.S. food industry is struggling to deal with the challenges of the COVID-19 pandemic. The meat and poultry sector have been at the forefront of this emerging issue; as of May 3, 2020, there were at least 4913 cases reported in 115 USDA-regulated plants located across 19 states. Facilities have been temporarily closed to address sanitation and personnel policies, creating marketing shortages that resulted in the enactment of the Defense Production Act (DPA). 

Using CDC and WHO Guidance, this webinar will provide practical tips on best practices to mitigate workplace exposure based on what is currently known about the COVID-19 virus. The use of “social distancing” as the primary mode of mitigation has proven to be particularly difficult to implement in a food production setting but there are steps that can be taken. Other areas to be discussed include updated cleaning and sanitation practices, and measures to ensure your facility is better prepared for the duration of this pandemic.

An experienced veteran in food safety, Patricia Wester  has held advanced positions in both domestic and international food safety firms. She is currently president of her own consulting company, PA Wester Consulting, which allows her to utilize her experience in food safety and auditor competence as an active subject matter expert on a wide range of development projects for preventive controls and food safety auditor personnel certification schemes and training. In 2017 Wester  launched The Association for Food Safety Auditing Professionals, a member-driven association created to support and enhance the career development path for food safety auditors. She is also currently a technical auditor for ANSI in food safety. She received her bachelor of science in poultry science from the University of Florida, and has held senior management positions within the meat and poultry processing industry.

Wester is an experienced FSPCA PCQI and FSVP Instructor. She  manages the AFSAP training portfolio and is the author of “Building a (Better) Food Safety Plan”, published by Academic Press.

Stefan Wright is a Regional Sales Manager for Sterilex and an experienced Food Safety professional. Stefan has held positions focusing on sanitation, food safety, quality systems and manufacturing. He has experience working with a variety of key industry initiatives including Food Manufacturing Operations Management, GSFI, Food Processing Sanitation, Hazard Analysis and Critical Control Points (HACCP), GMP implementation, Process Engineering Management, and Environmental Health Safety. Stefan holds a Bahcelor’s degree in Restaurant, Culinary and Catering Management in addition to a Master's degree in Food Science.
